Sage – A Mediterranean Treasure

Sage, Salvia, is a large group of plants with a wide range of medicinal and culinary uses. This sage bush is right at the entrance of the garden, and I love to start a day of digging by crushing a few leaves in my hands and inhaling deeply.  A hardy perennial here in Zone 7, this particular plant has come through seven winters unscathed.  Each spring I cut it back almost to the ground, and it rewards me with pungent green leaves to be used in one of my favorite dishes – Butternut Squash Ravioli with Brown Butter and Sage.
